• Lemon zest and juice
• Olive oil
• Chopped onion
• Bulgur wheat
• Black pepper
• Salt and black pepper
• Cook or soak the bulgur until tender and drain off any excess water. Set aside to cool.
• Combine the diced tomatoes, chopped onion and lettuce and mix well.
• Finely chop the parsley and add to the mix. Add salt and pepper as per taste.
• Drizzle lemon juice, olive oil aand let the flavours mingle. Serve chilled.
